Choc Buns Recipe

These are very high in sugar and should be reserved for occasional treats.  For more cake  recipes using the minimum of sugar, see our booklet 'Pig Out' which we sell on our stalls at events in the city.

This recipe makes an astounding 40 muffins using the traditional size smaller bun cases (as opposed to the larger American style muffins which have become popular).  It makes even more with the 'bonbon' size cases, but the recipe can be used for all three sizes).  If you want to be trendy you can call them cupcakes.

Ingredients (where one cup is 240ml)

3 cups plain flour
2 cups sugar
6 tablespoons cocoa
2 teaspoons baking powder
1.75 cups water
.75 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla essence

Sift and Mix the dry ingredients together.
Add the wet ingredients and mix well without beating hard until you have a slightly stiff dropping consistency.  Adjust the water accordingly - reserve a little as you stir.
IMMEDIATELY bake in a hot oven at 180C for 20-25 mins (10 mins for mini-muffins)

Glace Icing

Half a packet of icing sugar will cover up to 40 buns.

Sift 225g of icing sugar into a bowl and gradually stir in 2.5 tablespoons of water - be very careful as too much will make the icing runny.  You are aiming for a spreadable consistency.  Ice the buns immediately or the icing will set.
